NUFD 153 DYNAMICS OF FOOD AND SOCIETY Ethnic Foodways Research Project and Presentation 1. Assignment Description Foodways are the combined social, economic, material and cultural practices that determine the way people eat.
Throughout history and across space, foodways have always been dynamic. When immigrants come to the United States, they bring with them distinctive foodways. These foodways become transformed as a result of influences from more dominant foodways (power structures), but they also may influence dominant foodways in turn (consider pizza, for instance).
Therefore, it is important to understand how ethnic foodways shape and are shaped by places. Your objective in this assignment is to consider an ethnic foodway outside of your own familial/cultural experience and norms and study it in detail. You will be required to do background research using at least four academic sources.
You will have two objectives for this research project. First, use the components of cuisine to characterize the foodway you are studying (pay particular attention to selectivity, aesthetics, space/place). Second, you will discuss how the foodway has changed over time as a result of shifting power structures from colonialism, neoliberal globalization, and the nutrition transition.
2. Background Research ?You are required to consult and cite at least four academic/scholarly sources, which may include academic articles, books published by academic presses, or academic encyclopedias. You may decide to consult the Encyclopedia of Food and Culture (Katz and Weaver, 2002), which includes entries on national and regional cuisines.

Directions will be provided on how to create a narrated presentation. Your first task will be to do research and design the presentation. As part of your grade, you will be required to view and comment on your classmates’ presentations (at least two per region). Presentations should be based on this format: • Intro slide with title (1 slide) • Historical power structures related to the foodway (1 slide at least) o What historical processes and power relations have shaped the foodway? ? For example, think back to the Columbian exchange, colonialism, etc.
• Place and space (2 slides at least) o How have characteristics of place and relations across space shaped the foodway? ? For example, how do local ecological conditions determine what can be grown there? ? How have different cultures or religions come together (through migration, colonization, etc.
